From the man at the helm of the Sacred Hill Wines. Tony has now started his own label and he will be producing only Chardonnay. The wine is clearly aimed at the 'old school' style of Chardonnay, exemplified best by his top Skeetfield label. But Tony's expertise allows the wines to remain elegant and refined, even while they are while big, bold and buttery. Experimentation in style and technique is meanwhile producing results in new styles such as his remarkable, un-oaked Golden Egg Chardonnay.
The man who has helmed the winemaking duties that took Sacred Hill from a few vines in a field near Puketapu to a major player with markets, medals and hectares to burn has finally turned out a wine under his own label.
Tony Bish is one of NZ's pre-eminent craftsmen when it comes to Chardonnay, so it comes as no surprise that his initial outing champions the variety that has made him hugely respected by wine aficionados everywhere.
His first vintage in 1981 was at Corbans winery in Gisborne followed by a winter ski season at Mt Hutt. In 1982 he landed a vintage job at Vidals in Hawkes Bay where he met Richard Brimer. Tony and Richard enjoyed three vintages together at Vidals before Tony committed to studying for a winemaking degree in Australia, and Richard continued to hone his photography skills.
After a year in Australia working in a larger winery, Tony returned to Hawkes Bay to a vineyard job with the Mason family and in 1986, formed Sacred Hill Wines with Mark and David Mason. After various sojourns into other wine regions such as Central Otago and Martinborough, Tony settled back into Sacred Hill and raised 4 kids with his wife and life partner Karryn.
