On the nose, pepper-sprinkled strawberries, candied lime peel, bike-tire inner tubes, freshly rubbed mint and soy sauce. An alarming combination that works surprisingly well. On the palate, fresh and clean minty flavours kick things off, with chocolate notes following shortly after. Underneath everything is a layer of savoury umami: reduced soy sauce, buttered toast and grilled meat. Greener notes build on top: leafy and fresh. Sweet fruit builds, with sweet cooked agave joined by sharp granny smith apples. To finish, the mint fades to reveal strong mineral notes and a touch of sugary sweetness. Fruit and pepper remain.

Derrumbes Durango is made with Cenizo (Durangesis) agave in Nombre de Dios, Durango. The process of creating this intriguing mezcal is overseen dutifully by maestro mezcalero Urial Simental, from the cooking of the agave in stone pits underground using black oak, to the fermentation in underground tanks lined with pine wood and wooden stills. The result is a mezcal with a distinctive Derrumbes character, from a region that is gaining a reputation for mezcal production for all the right reasons.

From Oaxaca, to Michoacan and beyond, Derrumbes tend to cook their agave in stone pits underground (unless it's their San Luis Potosi expression which uses a 'horno' like small traditional Tequila producers) using black oak to give a light smokiness which brings out the fruit, mineral or herbal notes depending on the type of agave used. Unique fermentation processes include; underground tanks lined with pine wood and distillation via a wooden still, all of which guarantee some of the most intriguing and unique aromas and flavours to be experienced in Mezcal.
