The Sheep Milk is first fermented for a period of up to two weeks before being distilled into a full strength spirit.

New Zealand Sheep roam free in some of the world’s most pristine natural environments. The WS Co Sheep are happy, healthy and best of all produce great tasting Milk.
Special yeasts, traditional brewing techniques, and plenty of care and attention allow them to ferment Sheep Milk into alcohol. It’s a complex and time consuming process that takes around 12 days to complete, but the result is well worth it. They use a traditional Copper Still to distill the Sheep Milk. This lets them retain more of the natural Sheep Milk flavours and helps give their Spirits and Liqueurs their unique taste.
