PROTECTED BY TRADITION: THE DENOMINATION OF ORIGIN
Both Tequila and Mezcal are protected by a Denomination of Origin (DOT). Much like Champagne must come from France, these spirits can only be legally produced in specific authorised regions of Mexico.
Tequila is legally restricted to five Mexican states, with Jalisco serving as the undisputed heartland, producing over 90 percent of the world’s supply.
Mezcal is produced across a much wider geographic map, currently covering between nine and thirteen states. While Oaxaca is the historic centre of production, regions like Durango and San Luis Potosí are increasingly recognised at COVE 27 for their unique regional profiles.
THE AGAVE PLANT: ONE SPECIES VS. MANY
The variety of agave used is the most significant factor in the final flavour profile and consistency of the spirit.
TEQUILA: THE BLUE WEBER STANDARD
Tequila must be made exclusively from a single species: Blue Weber Agave (Agave tequilana Weber var. azul). This strict requirement results in a consistent, agave-forward flavour profile often described as clean, sweet, and citrusy. MEZCAL: A WILD BIODIVERSITY
In contrast, Mezcal can be crafted from over 30 to 50 different species of agave, including rare wild varieties.
Espadín is the most common variety, accounting for roughly 90 percent of production and offering a versatile, approachable profile.
Wild varieties like Tobalá, Tepeztate, and Cuishe are highly sought after by collectors for their unique earthy, floral, or mineral notes.
UNDERSTANDING THE AGING TIERS
While the plant provides the soul, the aging process provides the character. At COVE 27, we categorise our Tequila into three primary tiers:
Blanco (Silver): Unaged and bottled shortly after distillation. This is the purest expression of the Blue Weber Agave - bright, peppery, and fresh. A premium Blanco like Casamigos or Fortaleza is a revelation for those who have only ever tried mass-market alternatives.
