Mermaid Gin

The Isle of Wight Distillery was founded in 2014 by Xavier Baker and Conrad Gauntlett, combining Xavier’s brewing expertise with Conrad’s decades of winemaking and viticulture experience. Established as the island’s first distillery, it began as a passion project to create handcrafted spirits shaped by the Isle of Wight’s distinctive coastal landscape. Now based at Pondwell Hill near Ryde, the small team behind Mermaid works with ethically sourced and often local ingredients, including wild-foraged botanicals, while minimising waste and protecting the marine environment that inspires its spirits. Certified B Corp since 2022, the distillery has evolved from its celebrated gin beginnings into a distinctive producer of gin, vodka and rum, united by craftsmanship, sustainability and a refreshing sense of place. Mermaid spirits capture the Isle of Wight’s coastal character through natural ingredients and carefully controlled production. Mermaid Gin combines ten botanicals, including locally foraged rock samphire and Boadicea hops, with slow distillation capturing only the heart of each batch. Mermaid Salt Vodka is grain-distilled in a column still, blended in small batches with Isle of Wight spring water and enhanced with locally harvested sea salt. Mermaid Spiced Rum brings together column-distilled rums from Trinidad and the Dominican Republic, aged 2–5 years in ex-bourbon oak before being infused on the island with rock samphire, fruit, honey, black salt and spices.
