Cognac was created in the 16th century when Dutch settlers travelled to France to purchase salt, wood and wine. They wanted to preserve their wine for the long journey back so decided to distil the wine into "eau-de-vie", a colourless fruit brandy. It was a hit so they distilled it twice, making the brandy finer, more elegant and taste even more. Only brandy made in the Cognac region of France, can be called “Cognac.”
