Montelobos was envisioned by agave authority Dr. Iván Saldaña and crafted by fifth-generation mezcalero Don Abel López. From organic Espadín cultivated on Loma Larga, the agaves are harvested at full maturity, slow-roasted in volcanic stone pits for nearly a week, then crushed by a mule-drawn tahona. Wild fermentation in open pine vats captures the native yeast of Oaxaca’s terroir, while copper stills over wood fire deliver purity with character. The result is a mezcal that reflects balance between green agave, cooked agave, smoke, and wild fermentation. Named “Mountain of Wolves,” Montelobos also partners with the Wolf Conservation Center, embodying a philosophy of respect for nature and cultural guardianship alongside artisanal mastery.
