SULLIVANS COVE HISTORY

"The River Derwent

In 1804, a group of military, settlers and convicts lead by Captain David Collins settled at Sullivans Cove on the west bank of the Derwent river. The settlement would eventally grow into the vibrant and beautiful port city of Hobart. Sullivans Cove Distillery pays respect to the Muwinina people, traditional owners of Hobart, whose ancestors walked this land long before anyone thought to make whisky here. 

The Penal Colony

1824 - in the harsh early days of the colony, convicts, soldiers and free settlers all favoured a drink or two. Presented with an abundance of pristine mountain water and land perfect for growing barley, the colonists were soon producing their own spirits, with sixteen legal distilleries and countless small-scale farmhouse operations by 1824.

Prohibition on Distilling

In 1838 a new governor by the name of John Franklin decided that spirits were a bad influence on the colony, and banned distillation outright. This prohibition would last for over 150 years. It was not until 1990 that the law was overturned and the modern Tasmanian whisky industry could be established.

Sullivans Cove Established

1994 - Sullivans Cove Distillery was established in 1994 at its original location at the old gasworks at Sullivans Cove, making it the oldest commercial whisky distillery in Tasmania. In the early days, the reputation of Sullivans Cove was poor to say the least, but in 1999 new ownership vastly improved the quality of the whisky being produced.

Sullivans Cove Moves to Cambridge

In 2004, the distillery moved to its current location in Cambridge. By 2007, Sullivans Cove started to gain international recognition with our American Oak winning Best Other Malt (whiskies outside of Scotland) at the World Whiskies Awards and Liquid Gold (95/100) in Jim Murray's Whisky Bible.

The World's Best Single Malt

In 2014 when our French Oak cask HH0525 was named Best Single Malt Whisky in the World by the World Whiskies Awards, both our little distillery, and the Tasmanian whisky industry as a whole, shot to international acclaim. We’ve been trying to keep up ever since. With a new generation of keen young distillers now bringing their passion for Tassie whisky to the table, Sullivans Cove continues as Australia's premier single malt whisky distillery."

THE PRODUCTION PROCESS

"Tasmania has some of the cleanest water in world, making it an ideal place for producing world class whisky.

Tasmania also has some of the best barley growing land in Australia. The combination of good grain and good water is the foundation of all good whisky. We only ever use 100% Tasmanian malted barley to make our whiskies.

The malted barley is brewed into wash (basically an un-carbonated and un-hopped beer) for us by local brewers with decades of experience.

We then double distill the wash in our unique, Tasmanian built pot still (her name is Myrtle). The first distillation, known as the "wash run" produces "low wines" of about 20%ABV. We then put the low wines back through the still for the "spirit run" to produce a spirt of around 70%ABV.

We then dilute the spirit to 63.5%ABV before entering it into the casks for ageing. The majority of our whiskies are aged in either 200L American oak ex-bourbon barrels, or 300L French oak ex-tawny barrels. Allowed to mature over many years in the unique Tasmanian climate - generally between nine and eighteen years.

Once the whisky has rested for a few years, we begin sampling and tasting. Our most intriguing and complex whiskies go into our single cask bottlings, allowing each cask to express its own unique character.

Every bottle of Sullivans Cove is filled, labelled, polished and packed by hand right here at the distillery. And while we're not limited to age statements, preferring to bottle our whiskies when we reckon they're ready, the small white side tag will tell you exactly what's in every bottle.
