The history of the Poli distilleries began in 1898 in a tavern in Schiavon in the Province of Vicenza by GioBatta, the great grandfather of the current owners, who distilled the pomace harvested in the farms of the Veneto foothills with his cart-drawn still. grappa. Grappa di Sassicaia Poli is obtained from the pomace of Cabernet Sauvignon and Cabernet Franc grapes previously selected for Sassicaia wine, distilled according to artisanal processes in small batches, using the copper still with discontinuous cycle steam boilers. Grappa ages in 225 litre oak barrels used to refine Sassicaia, from which it inherits that aristocratic aroma that makes it unique.
