THE HUSK DISTILLERS STORY
Inspired by the rich and vibrant rum culture of the Caribbean islands, paired with a desire to craft fine Australian spirits, distiller Paul Messenger, his wife Mandy, and their three daughters embarked on an ambitious endeavour. They set out to create a plantation distillery on their cattle and cane farm, nestled in the lush, green caldera encircling Mount Warning in Northern New South Wales.
Their vision was to produce a premium, farm-to-bottle agricole rum, reflecting a distinctive Australian character. Now in its eighth year, their journey has been one of learning, adaptation, and perseverance. They embraced innovative techniques, developing small-scale cultivation, harvesting, and crushing methods uncommon in the region. The distillery itself was designed with a unique approach to fermentation, distillation, and maturation, diverging from conventional commercial rum practices. The result is a rum imbued with the unique essence of its provenance – a true reflection of their part of the world.
Husk Rum, crafted exclusively from freshly crushed cane juice, can only be produced during the harvest season, running from August to November. While the first batch of rum from their 2012 harvest quietly matured in oak barrels, the family began exploring gin-making – venturing into uncharted territory with a spirit that would challenge perceptions of what gin could be.
The result was Ink Gin, a daring creation that exceeded expectations. Its mesmerising colour and gentle flavour captured the hearts of gin enthusiasts across the country. Demand quickly outgrew the modest farm-shed distillery, prompting the construction of a new facility in late 2016. This larger distillery, complete with a cellar door, bar, and barrel house, became the heart of their operations.
In April 2017, they faced their greatest challenge to date. The devastating aftermath of Cyclone Debbie unleashed the most severe flooding the Tweed Valley had seen in a century. With four metres of water inundating the farm and one metre sweeping through the barrel shed and distillery, construction was brought to a standstill as the region focused on recovery and rebuilding.
After 2.5 years of determined effort, the new distillery was finally completed in 2019. It now stands proudly with its welcoming cellar door and café, offering visitors the opportunity to tour, taste, and experience their story firsthand.
As they continue to push boundaries with experimental blends and innovative craft spirits, the family looks forward to welcoming guests to their farm and sharing the next chapters of their journey.
