The Port of Leith Distillery's name is inspired by Dr. James Lind of Edinburgh, who conducted one of the first clinical trials aboard the HMS Salisbury. In these trials, he noted that the scurvy patients eating citrus fruits were showing good signs. Hence the addition of lime into the Port of Leith Distillery's gin.
The Port of Leith Distillery will return single malt Scotch production to Edinburgh's historic whisky district of Leith. Founded by two lifelong friends and whisky obsessives from Edinburgh, the distillery is a major new landmark in Scotland’s capital city, and a modern face for the Scotch whisky industry. From the Tower Street Stillhouse, just along the road from the site of the new distillery, they distribute their beautiful Oloroso Sherry, sourced from the bodega in Spain who supply the distillery with casks to mature the whisky.
The company is currently constructing a new remarkable vertical distillery, that will be capable of producing 400,000lpa (litres pure alcohol per year). A vertical production process, with grain milling and mashing at the top, leading down through fermentation to distillation at the bottom.
Lind and Lime Gin is the very first spirit produced by The Port of Leith Distillery Co and the company is currently planning on distilling its first whiskies so fulfilling its ambitions to bring single malt Scotch whisky production back to the Leith district.
