The Hearach First Fill Oloroso Cask Matured is a richly expressive Hebridean single malt where the wild character of Harris meets the opulence of Andalusian sherry wood. Fully matured in first-fill Oloroso butts, it layers dark fruit, roasted nuts, winter spice and gentle peat smoke over a beautifully textured core. Distilled, matured and bottled entirely on the Isle of Harris, it is a distinctive whisky for collectors, gifting and contemplative sipping.
Tasting Notes & Experience
Rich amber in the glass, The Hearach opens with cinnamon, caramelised orange peel and cloves, joined by dried red fruits, roasted hazelnut and a delicate veil of coastal smoke. The palate is velvety and full, revealing figs, dates and dark chocolate alongside savoury walnut, dried thyme and softly charred oak. Burnt citrus, vanilla pod and gentle peat carry into a long, warming finish with leather, liquorice, sea salt and lingering Hebridean spice.

Craftsmanship & Story
The Isle of Harris Distillery opened in 2015 in the harbour village of Tarbert with a purpose extending far beyond whisky. Founded by Anderson “Burr” Bakewell, the distillery was created as a long-term social enterprise designed to generate sustainable employment and help strengthen the island community. Known affectionately as “The Social Distillery”, it combines this community-first philosophy with exacting whisky production. The Hearach is made using exceptionally soft local water drawn from Abhainn Cnoc a’ Chàrnain, flowing over ancient Lewisian gneiss, and undergoes fermentation lasting up to 120 hours to build aromatic complexity before distillation in custom-designed copper stills, Eva and The Dottach. Every drop is distilled, matured and bottled on Harris, allowing the whisky to remain intimately connected to its island home from spirit to finished bottle.
Special Features
This second permanent whisky expression from the Isle of Harris Distillery stands apart through both its full Oloroso maturation and unmistakable Hebridean identity. Rather than receiving a short sherry finish, the spirit spends its entire maturation in first-fill Oloroso butts, giving the whisky a deeper, more integrated richness while preserving the lightly peated character of the distillate. Its presentation is equally distinctive. Designed by Stranger & Stranger, the tactile rippled bottle reflects the movement of West Tarbert’s waters and the woven textures associated with Harris Tweed, while a solid beech stopper topped with a debossed copper disc adds a beautifully crafted finishing touch. Presented in a premium embossed and copper-foiled gift box, it has exceptional visual presence for gifting and display.
Ageing & Maturation
The Hearach Oloroso Cask Matured spends its full ageing journey in 100% first-fill Oloroso sherry butts sourced through the distillery’s longstanding relationship with José y Miguel Martín in Jerez. These dry, dark and nutty sherry-seasoned casks bring layers of dried fruit, walnut, spice and bittersweet richness to the spirit. Maturation then takes place entirely on Harris, where the cool, humid Atlantic climate encourages slow integration between oak and whisky, allowing the warmth of Andalusian sherry wood to meet subtle peat smoke, maritime freshness and the natural character of the island spirit.
Recognition & Accolades
The Hearach First Fill Oloroso Cask Matured has quickly attracted international recognition for both the whisky itself and its beautifully considered presentation. As the second permanent single malt expression from the Isle of Harris Distillery, its early honours reinforce the quality, individuality and craftsmanship behind this distinctive Hebridean release.

Cocktail Pairings
The Hearach’s rich Oloroso fruit, warming spice and gentle peat make it particularly expressive in spirit-forward cocktails, where its darker Hebridean character can remain centre stage.
-
Hebridean Rob Roy: Sweet vermouth and aromatic bitters amplify the whisky’s dried fruit, walnut and winter spice, creating a deep, velvety classic.
-
Smoky Oloroso Old Fashioned: Brown sugar, orange bitters and citrus oils draw out dark chocolate, burnt orange and fireside smoke in a wonderfully contemplative serve.
-
Blood and Sand – Harris Edition: Cherry liqueur, sweet vermouth and blood orange bring vivid red-fruit brightness to the whisky’s sherry richness and gentle peat.
-
Andalusian Penicillin: Fresh ginger, honey and citrus provide lift and warmth while allowing the maritime smoke and savoury Oloroso character to linger beneath.
-
Sherry Cask Boulevardier: Campari and sweet vermouth create a bittersweet, sunset-hued aperitif layered with dark fruit, roasted nuts and smoky spice.
From the richness of a Rob Roy to the brighter spice of a Penicillin, each serve highlights a different facet of the whisky while preserving its unmistakable Oloroso and island character.
Food Pairings
The Hearach’s combination of Oloroso richness, gentle smoke and maritime freshness makes it superb alongside deeply flavoured food. Mature crystal-flecked Cheddar or creamy blue cheese brings a savoury contrast to its dried fruit and velvety texture, while charred venison echoes the whisky’s earthy smoke and winter spice. Hot-smoked salmon draws out its coastal salinity, while dark chocolate truffles or warm pecan tart amplify roasted nuts, bitter cacao and the lingering warmth of the sherry casks.
Perfect for Gifting or Sipping
The Hearach First Fill Oloroso Cask Matured is an inspired gift for the Scotch whisky enthusiast, island whisky collector or anyone drawn to spirits with a genuine sense of place. Its full maturation in first-fill Oloroso butts gives it an immediately distinctive personality, while the Isle of Harris Distillery’s social purpose and commitment to island production add an unusually meaningful story behind the bottle.
The presentation makes it especially memorable. Its tactile rippled glass, solid beech stopper and copper-detailed gift box reflect the landscape, craft and maritime identity of Harris, giving the bottle a sense of occasion before the whisky is even poured. Enjoy it neat to appreciate its full depth, add a little water to reveal more citrus and spice, or savour slowly over ice beside a fire.
