Craftsmanship & Story

West Cork Distillers was founded in 2003 by childhood friends John O’Connell, Denis McCarthy and Ger McCarthy, beginning modestly in Union Hall with two small stills and little more than determination and curiosity. Denis and Ger had previously worked as fishermen off the West Cork coast, an experience that continues to shape the identity of the distillery today. Now based on a substantial site in Skibbereen, West Cork remains independently and wholly Irish owned, with an unusually hands-on approach to production. A portion of its barley is malted in-house, while locally sourced grain and pure Irish water form the foundation of the spirit. Triple distillation takes place slowly through copper pot stills to maximise copper contact and refinement, followed by maturation and finishing regimes designed to add flavour without overwhelming the underlying malt character. Every whiskey is bottled non-chill filtered and without artificial colouring, preserving natural texture, aroma and colour.
